Bajan Ceviche
If you don’t mind the strong aroma of sardines, try this refreshing and nutritious lunch, or snack for a couple close friends! Sardines are filled with Omega 3′s, CoQ10, Vitamin D, protein, B12 and anti-oxidants which help fight cancer, aid in cardiovascular health, joint health, hair, skin and nails…the list go’s on.
1 can sardines (3.75 oz)
2 TBL diced onions
1 tsp red bell pepper
2 TBL diced tomato
1 TBL diced parsley
3 TBL lemon
1 tsp Bajan (Barbadian) pepper sauce (Click here- Xnic Store)
salt & fresh ground pepper to taste
Combine & stir ingredients into a paste. Serve chilled on a bed of spinach with your favorite crackers.
