Stuffed Squash
Ingredients: Butternut squash, quinoa, Trader Joe’s Indian Fare Dal Makhani (made with black lentils and red kidney beans) or seasoned beans of your choice, chopped spinach, crushed garlic, extra virgin olive oil, butter, seasoning salt & pepper to taste.
Directions: Pre-heat oven 350 degrees. With a sharp knife cut butternut squash in half and scoop out it’s seeds and strings. (No need to peel squash.) Rub squash with extra virgin olive oil and/or butter. Sprinkle seasoning salt and pepper. Cook for about 45 min. While this is going, cook quinoa and prepare Trader Joe’s Dal Makhani. In separate small skillet, saute spinach with crushed garlic. Combine quinoa, Dal Makhani, and spinach to your liking. Stuff mixture into squash about 10 minutes before squash is done. Place in oven to complete cooking. Test squash with a fork to make sure it’s soft before eating. Enjoy!
